Use of birch sugar
You should use the birch sugar in the same way as the refined granulated sugar. Its sweetening effect is also the same as that of sucrose with a ratio 1 to 1. It has neither aftertaste nor side effect.
We recommend birch sugar for making both cold or hot dishes and drinks without changing recipes. You can use it for sweetening pastries, cakes, boiled or roast dishes, desserts or liqueurs. Please note that you can’t use it for dishes which are made with yeast, e.g. raised pies, as birch sugar does not nourish fungi due to its antibacterial effect.
Birch sugar has no harmful side effect; its consumption is safe so you can use it without any restraint.
You should take into account that while you are getting used to it, it might also cause diarrhea in sensitive persons as it accelerates digestive process. We advise you to allow a period of 4 or 5 weeks to get accustomed to it and during that period you should shift from table sugar to birch sugar gradually. The threshold value of its diarrhea effect is 150 grams per day in adults and 40 grams in children. You should not give birch sugar as well as chocolate to dogs and other pets.
